Ingredients:

2 cups potatoes, cut into 1/2 inch cubes
1 large carrot, diced
1 cup chopped leek or green onions(bulbs only)
1 garlic clove, minced
4 cups fat-free chicken broth
1/2 cup pearl barley
1 bay leaf
1/4 teaspoon thyme, crushed dried
1/4 tespoon black pepper
4 ozs Canadian bacon, cut into 1/4 inch pieces
1/2 cup fat-free evaporated milk
1/4 cup fat-free half and half

Note: (This recipe calls for fat-free half and half. I worked in supermarkets for 45 years I have never seen this nor heard of it. Not available in my city; good luck in finding it.)
